I had a few ideas in mind.

The first one being a bartender style game - similar to VA-11 HALL-A, except instead of pre-calculated orders, it'll be randomized for every person. I don't know if that would be considered AI or not, but I think with this idea, I'd have to focus on making the UI look great. It shouldn't be too difficult to code the "AI", but again, I don't know if it's considered AI if I just have randomized values. Maybe I could have people walking in the background? Or walking up to the counter to order.

The second one being a Call of Duty zombies style game - this one would be something I would be more familiar with in terms of AI, and the UI wouldn't have to be anything too complicated. There's a few great online resources for this because it's not a very unique idea, but maybe I would try to make it unique in terms of style.

The third one being a racing game - this one would probably be the most difficult out of all these ideas because I am not familiar with either vehicles in Unreal or how the racing AI works asides from following a spline. I'd have to figure out how to get the AI to overtake the player, etc. 

And then maybe an RPG game.
